6-8 bacon strips

8 fresh mushrooms, sliced

1 onion, chopped

1/3 cup green pepper, chopped

1 garlic clove, minced

8 eggs

1/4 cup sour cream

3/4 cup cheese, shredded

3 tabl. enchilada sauce

1 tabl. butter

4 tortillas, large

more sour cream for garnish (optional)



In skillet, fry bacon until crispy. Set aside on paper towel to drain. Reserve 1 tabl. drippings and saute mushrooms, onions, green pepper, and garlic in bacon skillet. Set aside and keep warm. In another bowl, beat eggs, and sour cream. Stir in 1/4 cup cheese and enchilada sauce. In another skillet melt butter; add eggs mixture and cook over low-med heat, stirring occasionally until eggs are done but not rubbery. Crumble bacon over cooked eggs, and add mushroom mixture. Stir to blend. Spoon mixture down center of tortillas; roll up. Place seam side down into a baking dish. Sprinkle with remaining cheese. Bake at 350 degrees for 5-10 minutes or until cheese is melted. Serve with extra sour cream if desired.
