1/2 lb. ground beef

3/4 cup onion, chopped

3/4 cup carrots, diced

3/4 cup celery, chopped

1 tsp. dry basil

1 tsp. dry parsley

4 tbls. butter (divided)

3 cups chicken broth

4 cups diced peeled potatoes


1/4 cup all-purpose flour

1 small jar soft yellow cheese

1-1/2 cups milk

3/4 tsp. sea salt

1/4 tsp. pepper

1/4 cup sour cream


Brown ground beef in skillet; drain, set aside. In stockpot saute onion, carrots, celery, basil, and parsley in 1 tablespoon of butter, until veggies are tender, about 10 minutes. Add broth, potatoes, and meat; bring to boil. Reduce heat; cover and cimmer 10-12 minutes or until potatoes are tender. Meanwhile in skillet, melt 3 tablespoons of butter; add flour; cook and stir until bubbly. Add to soup, stir; bring to boil. Add jar cheese, milk, salt and pepper and sour cream. Heat until comes to a boil; stirring frequently to prevent sticking.  Serve !!
