Cheesy Chicken Chowder

3 cups chicken broth

2 cups peeled potatoes, diced

1/2 cup onion, chopped

1 cup carrots, diced

1 cup celery, dice

1-1/2 tsp. sea salt

1/4 tsp. black pepper, ground

1/4 cup butter

1/3 cup flour

2 cups milk

2 cups shredded cheddar cheese

2 cups cooked chicken, diced



Bring chicken broth to a boil; reduce heat. Add potatoes, onions, carrots, celery, salt, and pepper. Cover and simmer for 15 minutes or until veggies are tender. Meanwhile, melt butter in medium sauce pan; add flour, and mix well. Gradually stir in milk; cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add to broth mixture, along with the chicken. Cook and stir over low heat until soup is completely heated.


Serves 6-8
