1 green pepper, chopped

1 onion, chopped

3 garllc cloves, minced

1 tabl. cooking oil

2 large cans tomatoes, chopped

1 can kidney beans

1 can pinto beans

1 can corn

2-1/2 cups water

1 cup rice

1-2 tsp. chili powder

1-1/2 tsp. ground cumin

Sour cream and chives (optional)


Saute green pepper, onion, and garlic in oil until tender.  Stir in all remaining ingredients; bring to a boil. Reduce heat; cover and simmer 30-35 minutes, or until rice is done; stirring occasionally.


Garnish with Sour cream and chives if desired
