Fluffy Apple Walnut Pancakes

Ingredients

3/4 cup old-fashioned rolled oats

3/4 cup water, boiled

 

1 cup all-purpose white flour

1 cup whole wheat flour

3 level tabl. baking powder

1 tabl. raw sugar (can use refined sugar)

1/4 tsp. ground cinnamon

1/2 cup walnuts, chopped

 

3 tabl. olive oil

2 eggs

1 1/4 cups milk

1 apple with peelings, choppped

 

Butter for topping

Pure maple syrup, or syrup of your choice

Directions

Put oatmeal in a medium size bowl, and pour boiling water over the oats, and stir:  Set aside.  In another larger bowl mix white flour, wheat flour, baking powder, sugar, cinnamon, and walnuts. Mix together. Now add oatmeal, olive oil, eggs, milk, and apple. Stir well, and let set for 5 minutes.  Prepare griddle with non-stick spray.  Laddle 1/3 cup of batter on to a hot griddle, and cook 1-2 minutes or until you can see bubbles arising in the pancakes. Flip over and cook other side in like manner.  Butter top side of pancake before removing to reserved pancake plate.  Repeat until all batter is used. Serve with maple syrup, or syrup of your choice.

 

Note*  By making 2 stacks of pancakes on your reserved pate, and adding the hot pancakes as they are done, it keeps all your pancakes hot until you are ready to serve your meal. Also, buttering the pancakes is made easier by only unwrapping the top half of a stick of butter and holding the wrapped side as your butter.  Enloy!!
