2 cans dark red kidney beans, drained

1 cup onions, finely chopped

1 cup celery, finely chopped

1/3 cup sweet pickle relish

3 eggs, hard boiled, cut up fine

1/3 cup mayonnaise

1/2 tsp. fine sea salt

1/4 tsp. ground pepper


In a small sauce pan put 3 eggs; add enough water to cover, and bring to boil; cook 8 minutes. Drain; put cold water over eggs to cool. Remove shells. Finely chop eggs, and put in medium size bowl. Drain kidney beans and add to eggs. Add onions, celery, relish, mayonnaise, salt and pepper. Combine all ingredients and chill for at least 1 hour.
