Course: desserts
Cusine: North American

10-inch single pie crust:

1 cups sifted all-purpose flour

1/2 tsp. sea salt

1/3 cup olive oil (or oil of your choice)

3-4 tabl. COLD water

1/8 tsp. vinegar

Note* Butter (softened) can be used in place of oil for a flakier crust

Blend flour and salt in a medium size bowl.  Add half the olive oil; use pastry blender until blended.  Then add other half of oil and blend with pastry blender again; just until evenly blended.  Add vinegar to 6 tabl of COLD water, and add to mixture. Cut water in with pastry blender until blended.  Then form a ball with your hands, making sure that all ingredients are blended evenly. Pat dough into a flat round disk and put in pie dish. Working from the center of the dough, press the dough toward the edges evenly, working your way around until the dough covers the lip of the dish with a little extra for pinching. If dough seperates pat together again, making sure not to make it too thin. When distributed evenly pinch dough between thumb and fingers to create a fluted edge.

For pre-baked crust:  Bake at 450 degrees for 12-15 minutes.

For fruit pies, or pies not needing pre-baked crust: Bake after filling with fruit or etc.
