2 cups dry lentils


1/2 cup onion, chopped

1/2 cup celery, chopped

1/4 cup carrots, chopped

3 tabl. parsley flakes

1 clove garlic, minced

2-1/2 tsp. sea salt

1/4 tsp. pepper

1/2 tsp. oregano flakes


1 (29 oz.) can of tomatoes, chopped

2 tabl. wine vinegar



In a soup kettle put 8 cups of water. Add all ingredients except tomatoes and vinegar. Cover and simmer 1 hour. Add tomatoes and vinegar. Simmer, covered, 30 minutes longer. Season to taste.
