3/4 cup celery, chopped

3/4 cup onion, chopped

1/4 cup butter

7 cups dry bread crumbs

1 tbls. chopped fresh parsley

2 cups shucked and chopped oysters (reserving juice)

1 bay leaf

3/4 tsp. fine sea salt

1/2 tsp. pepper

1-1/2 tsp. poultry seasoning

2 eggs, beaten

1/2-3/4 cup oyster juice

3/4-1 cup chicken or turkey stock 



Cook celery and onion in butter until tender. Add bread crumbs and parsley,  and mix well. Add oysters, bay leaf, seasonings, and eggs. Add enough oyster juice and stock to moisten well without being too wet; mix. Preheat oven to 325 degrees. Put stuffing into a shallow buttered baking dish and bake covered for 25 minutes, then remove covering and bake for 25 minutes more or until lightly browned around edges.  
Can put stuffing in a 10-12 pound turkey for cooking also.   (DO NOT EAT BAY LEAF)
