Ingredients

1-boneless beef sirloin top roast (2 1/2 pds.) cut in half

2 tsp. oil

1 1/2 cups sliced fresh mushrooms

1/3 cup sliced green onions

2 garlic cloves, minced

1 1/2 cups brewed coffee, (day old)

1/2 tsp. salt

1/2 tsp. chili powder

1/4 tsp. pepper

1/4 cup cornstarch

1/3 cup cold water

 

Directions

In a large skillet brown roast over med-high heat on all sides in oil.

Put in slow cooker. In same skillet saute mushrooms, onions, and garlic until tender. Stir in coffee, salt, chili powder, and pepper. Pour over meat. Cover and cook on low for 8-10 hours. Remove roast; keep warm. Pour cooking juices into 2 cup measure; skim fat. Combine cornstarch and water. Gradually stir in 2 cups juices. Boil, cook and stir for 2 minutes. Serve with beef
