Sour Cream & Bacon Cornbread

1-1/4 cups  all-purpose flour

4 tsp. baking powder

3/4 cup white corn meal (can use yellow)

1-1/2 tsp. fine sea salt


2 eggs

16 oz. sour cream

4 tbsp. light cooking oil

4-5 thin, lean, strips bacon


1.  Allow sour cream and bacon to reach room temperature.

2.  Lightly oil a 9-inch cast iron skillet, or spray with non-stick spray

3.  Cover bottom of skillet completely with bacon.

4. Mix all dry ingredients well in a large bowl.

5.  Mix all wet ingredients well in a medium bowl.

6.  Pour wet mixture into bowl with dry ingredients and blend together completely.

7.  Carefully spoon mixture into skillet; do not disturb bacon.

8.  With a wet spoon smooth mixture evenly around sides of skillet leaving a slight depression in the center.

9.  Bake at 425 degrees for 25 minutes, or until golden brown.

10. Let cool 5 minutes and turn upside down on a dinner plate.
