Ingredients

4 bacon slices

3 Tabl. green pepper, chopped

2 Tabl. onion, chopped

1 cup whole grain rice

1 #2 can (2 1/2 cups) diced tomatoes, reserving 1/2 cup liquid)

2 cups water

1 tsp. sea salt

1/4 tsp. ground black pepper

Directions

Partially fry bacon in skillet.  Add green peppers, and onions; cook till onions are golden and bacon crisp.

Add rice, tomatoes and reserved liquid, water, salt, and black pepper. Cover and cook over low heat; 45-50 minutes or until rice is tender.
