2 small yellow summer squash (1 pound total)

1/2-1 small tart apple

1 cup chicken broth

1/2 tsp. sea salt

1/8 tsp. pepper

1/8 tsp. nutmeg

1 tabl. minced chives or parsley


Trim ends from squash and cut into thin slices. Core apple and cut into thin slices.  In a medium saucepan, combine squash, apple, chicken broth, sea salt, pepper, and nutmeg. Cook until squash and apple are tender, 6-8 minutes. Garnish with chives or parsley before serving
