Method

  1. Heat the milk and butter together until boiling.

  2. Combine the cornmeal and salt in a bowl, then pour the hot milk and butter mixture over it.

  3. Allow the mixture to cool.

  4. Stir in the well-beaten eggs and sifted wheat flour.

  5. Bake on a hot, greased griddle until golden brown on both sides.

CAKES.

As Made in South Carolina.

One qt. milk, ^ lb. butter, i pt. Indian meal, 5 even spoonfuls
of wheat flour, 4 eggs. Boil the butter in the milk, and pour over
the meal, to which i teaspoon salt has been added. Let it cool and
add the well-beaten eggs and sifted flour. Bake on a griddle.
