Method
Heat the milk and butter together until boiling.
Combine the cornmeal and salt in a bowl, then pour the hot milk and butter mixture over it.
Allow the mixture to cool.
Stir in the well-beaten eggs and sifted wheat flour.
Bake on a hot, greased griddle until golden brown on both sides.

CAKES.
As Made in South Carolina.
Contributed by Mrs. Charles Brinton Coxe, Philadelphia, Pa.
One qt. milk, ^ lb. butter, i pt. Indian meal, 5 even spoonfuls
of wheat flour, 4 eggs. Boil the butter in the milk, and pour over
the meal, to which i teaspoon salt has been added. Let it cool and
add the well-beaten eggs and sifted flour. Bake on a griddle.
