Method

  1. Separate the eggs.

  2. In a bowl, combine the flour, sour cream, and egg yolks, mixing well.

  3. Thin the batter to a very thin consistency using sweet milk.

  4. Stir in the melted lard.

  5. Dissolve the baking soda in a small amount of milk and add to the batter.

  6. Gently fold in the whipped egg whites last.

  7. Bake quickly in very hot, greased waffle irons.

WAFFLES (PERFECT).

One pt. sour cream. 2 pts. flour. 3 eggs, i teaspoon of soda, 3
tablespoons of melted lard, a little salt. Beat the eggs separately, put
flour and sour cream in the yellows, thin the batter very thin with
sweet milk. Add lard, then soda dissolved in a little milk, and lastly
the whites. Bake quickly in very hot irons.
